Directions
Taquitos are so very versatile. They can be used as an appetizer or as the shining star of your meal. I like to whip up some homemade salsa and guacamole to go along with them. My kids are never dissapointed when I say “Tonight is a Taquitos night”.

Preheat the oven to a toasty 400º F. Next, line a large cookie sheet with aluminum foil. I like to do this because it makes clean up so much easier. Brush about a tablespoon of the oil onto the cookie sheet. |

Put your unwrapped cream cheese in a large MICROWAVE SAFE mixing bowl. Put it in your microwave for 12 seconds. Flip the cream cheese over and then microwave it another 12 seconds. I find this is enough to soften the cream cheese. Easy peasy!! Now add the sour cream, salsa and taco seasoning. Mix with a mixer just until combined. I've found that the lumps just melt away when they bake. |

Now your ready to mix in the cheese and cilantro. I just throw those ingredients into the bowl and let my mixer do all of the work. Now, is when you add your chicken. I find that my hands incorporate everything the best. You can use a spoon, but I'm telling you, the hands really do the trick. |

Grab your tortillas, a small cookie scooper and a little bowl of water. i like to put 3 scoops of the chicken mixture left of the center of the tortilla. I then roll it up from the left side and when I get to the end I dip my fingers in the water and moisten the end of the tortilla that will fold over and complete my taquito. I find that this helps seal things together. Obviously, you will do this 12 times. |

Place your taquitos seam side down on the prepared cookie sheet as you finish each one. When you have 12 taquitos staring up at you, brush them with the remaining tablespoon of olive oil. This helps them get a little crisp to them. I have found that spacing them 1" apart helps with that too. My boys like them crispy! I end up using 1 large cookie sheet and 1 small one for several extra's that didn't fit on the intital pan. If you don't mind them touching, you can get away with one. |

Bake for 15 minutes or until they get a little brown. These are best served warm. Enjoy!! |
