This is a recipe that I came up with when I thought it important to have a homemade spaghetti sauce recipe. I got tired of the jar variety and decided to go out on my own. I’m glad I did. This is a recipe that I reach for on a regular basis.

Heat a large saucepot on medium-high heat. Once hot add garlic and onion stir and cook until translucent, about four-six minutes. |

Next, add cans of whole tomatoes, tomato sauce, and tomato paste to the pot and stir. Be careful as you add these because the juices tend to splash up. This is when an apron comes in handy to protect your clothes. |

Now add all the spices. Stir it all up and bring it to a boil. Once you've got it boiling, cover it and turn down the heat to low, and let it simmer for at least 20 minutes. I usually let it go for almost an hour, but if you're in a hurry 20 minutes will do. |

During the last 5-10 minutes of cooking time, I use an immersion blender to smooth out the sauce. You can make it as creamy or chunky as you want. The longer you blend the less chunky and more smooth your sauce will be. |
