Directions
We have been making this waffle recipe for the last 15 years. I love it!! When my kids were younger I tried to find ways to add whole wheat flour in where I could. Unfortunately, I found going 100% whole wheat can leave you with heavy waffles. In this recipe, I combine unbleached flour, whole wheat flour, and oatmeal. These turn out light and fluffy and are a little healthier than other recipes. Enjoy!

1In a large mixing bowl, combine the unbleached flour, whole wheat flour, oatmeal, sugar, baking powder, and salt. Mix these ingredients together with a whisk. |

2Melt the butter in a microwave-safe bowl(I use a glass measuring cup). Meanwhile, beat the eggs in a medium-sized mixing bowl. Now slowly pour the melted butter into eggs. I try to pour the warm butter down the inside of the bowl so that it gets a chance to cool a little to keep it from cooking the eggs. I whisk the mixture in the bowl as I pour. I haven't had cooked eggs yet using this method. |

3Now add the milk to the butter/egg mixture. Continue to whisk as you pour. I find this prevents the butter from solidifying. |

4Hopefully, you've preheated your waffle iron. If not, now is a good time to plug it in. I place a large piece of aluminum foil under my waffle iron for easy cleanup. I always have at least one overflow that spews out onto the counter. |
